The Hedrich family has been farming in Chilton, Wisconsin for more than 30 years. Cheesemaking, however, is a more recent venture and, for 25 year old Katie Hedrich, her Evalon winning 2011 Best of Show is a pretty remarkable feat. She’s among the yougest winners ever and only the second woman to take top honors.

The Heavy Table featured Katie’s win last March.

Evalon is a “Gouda-style” goat cheese. The resulting texture is a bit fluffy and crumbly though somewhat moist. Not sure how I feel about that aspect yet. The flavor is generally “fresh” with a little citrus tang and a savory flavor lingers in your mouth for some time.

It’s a good melting cheese, it split the difference in a triple-cheese grill last night between six-month Mimolette and twelve-month Manchego. I liked it here more.

I'm trying to keep a log of all the things we cook which taste really lovely. And it will also save a lot of time and bits of paper when it comes to sharing those recipes with friends.
