WiTR Review: Mimolette (The Younger)

Cheese: Mimolette (young)

Who: Various, both artisanal and industrial

Where: Calais, France

Milk: cow, raw

Rind: natural

Texture: firm when young, hardening with age

Shape: typically a 7-8lb globe

Flavor: bland when this young

Pretty to look at, but like a shiny Red Delicious apple, not much flavor when quite young, Mimolette is an Edam-style cheese that changes dramatically with age.

I’ll review an aged variety later, but today’s post is more a reminder that looks, especially with cheese can be deceiving. That bright-orange annatto-heavy paste beckons, but there is barely any flavor there.

If you can find an aged piece, the rind will have taken on a very craggy appearance and the flavors will have emerged, though, in my opinion, are never strong. In fact, it looks much like a cantaloupe.
