From Pueblo to Parma – New Colorado Cheese Shop

Forget the plastic-wrapped processed-cheese slices.

 Instead, think Monterey Jack flavored with Pueblo-grown Mirasol chiles, or award-winning cheddar from Wisconsin or goat’s milk cheese from Basalt.

 Pueblo’s new Springside Cheese Shop at 517 W. Fifth St., Suite 104, is an invitation to try out-of-the-ordinary flavors like cumin Gouda and to travel to historic cheese-producing locales such as England, Germany, France — and Wisconsin.

 The store’s grand opening will be from 10 a.m. to 6 p.m. Saturday, with a ribbon-cutting ceremony at noon.
