Two River’s Gouda is made about an hour northwest of the Twin Cities, pleasing to the eye with it’s bright white paste and brilliant yellow coating, it’s an otherwise unremarkable cheese.

At first glance, with its eyes and shape, the impression is gouda; however, there’s little resemblance to traditional gouda in the texture, it’s more rubbery than that. The taste also shows none of the depth of gouda but rather is mild but definitely goaty with a typical citrus tang.
