Fresh goat Crottin – smooth and creamy – SFGate

This week’s cheese review from Janet Fletcher features the “juvenile” version of  the cheesemaker’s Bijou.

A new favorite in this genre is the fresh goat Crottin from Vermont Butter & Cheese Co. This little rindless disk weighs just a little more than 2 ounces, so it’s ideal for a couple to share.

Allison Hooper, the creamery’s co-owner, tells me that the Crottin is ready to ship on day two, just as soon as the curd has drained sufficiently…
