Who: Holland’s Family Cheese


Where: Thorp, Wisconsin

Milk Type: cow, raw, farmstead

Texture: firm/hard

Rind: polymer coated

Shape: 20lb wheel

Flavor: Caramel, nutty, pineapple, sweet.

The Pentermans  have been making cheese for less than a decade but have been winning awards about as long. And while I generally don’t care for “stuff and bits” in my cheese, and they make thirteen flavors of Gouda including Black Mustard, Honey Clover and Smoked Cumin, their plain aged Gouda is excellent. Marieke represents the Gouda that has aged 9-12 months. No crystallization present, but very firm and flavors more present. They studied cheesemaking in Holland and the awars show it holds up with the best from Gouda’s homeland.

Like traditional Euro Goudas and alpine style cheeses, Marieke is excellent for cooking. It pairs well with bigger reds, including cab and Merlot-based blends. Beer drinkers: go for a pale ale or hard cider.
