2012 American Cheese Month 31 Cheeses in 31 Days: Day Eight: Pierce Point

Rind: bloomy & herb coated
Shape: 10oz round
Flavor: very mildly nutty and herbaceous
Cowgirl’s Pierce Point is pretty on the plate but perhaps just a tad too much work for the yield of a small cheese on the expensive side. Uncut, it is very appealing to the eye, but cut away the herbs (and you will want to), you’re left with a small dollop of cheese at a fairly dear price. On those herbs: chamomile, calendula, Thai basil and wildflowers, they impart beauty and a heady aroma but are dry and bitter to taste. The aroma hangs on in the cheese making the flavor a
bit exotic. Pierce Point is a harbinger of Autumn and Winter. A seasonal cheese, it’s just now coming round to finer cheese counters, though I’d personally opt for a perfectly ripe Mt. Tam if I could have but one from Cowgirl.
