31 Cheeses in 31 Days: Day Ten: Green Hill

2012 American Cheese Month 31 Cheeses in 31 Days: Day Ten: Green Hill

Cheese: Green Hill

Where: Thomasville, Georgia

Milk Type: Cow, pasteurized

Texture: semi-soft

Rind: bloomy

Shape: 160z flat wheel

butter, cauliflower

Ah Camembert… again <GRIN>

Green Hill is much like Moses Sleeper except that it’s dominant flavor is of cream and butter plus that cauliflower/corn note common to camembert-similar cheeses. It’s a double cream and is a bit richer than the others reviewed to date.

And like yesterday’s Moses Sleeper, it’s a beautiful specimen, perfectly shaped and evenly bloomy with a delicate rind.

Lightly warmed, it really comes to life. And the nose on it is deliciously creamy/buttery.

Salutation Recipes

I'm trying to keep a log of all the things we cook which taste really lovely. You know what it's like: you tweak and tweak a recipe until it's barely recognisable and then wonder how you used to make it. And it will also save a lot of time and bits of paper when it comes to sharing those recipes with friends.
