Goat cheese, honey, date & pistachio “truffles”

Hello friends!

The annual rush of holiday cheese board recommendations and recipes inspired me this morning to whip up my first  “original recipe” I’ve posted at Wedge in the Round. This is something simple, beautiful on a holiday plate, easy for entertaining and, most importantly, quite tasty! You can put these together in under 30 minutes, they’ll easily keep overnight and will disappear just as quickly.

Know someone who doesn’t like goat cheese? Don’t tell them! They’ll never know that this rich, savory-sweet little treat is goat.

The ingredients:

– 10oz fresh chevre like Ile de France
– 1/2c finely ground pistachios (I prefer shelled and salted)
– 5 whole Medjool dates, pitted and coarsely chopped
– 2T honey (light and floral, Basswood is perfect)

By hand, combine the honey, goat cheese and chopped dates; mix until evenly distributed.

Using a small spoon, scoop about one tablespoon of the mixture and roll into a ball in your palms.
Lightly roll each “truffle” in the chopped pistachios let lightly roll again in your hands
That’s it! Makes about one dozen.

  1. mmmm looks delicious and also not too sweet! Can you really not taste the goat-ness of this? (not that it matters coz I like goat cheese)
