“THE first cheese to be produced by the new dairy at Bodnant Welsh Food Centre is already a hit with customers.

Production of the new artisan cheese is being stepped up just weeks after its official launch.

The creamy Aberwen cheese is made by hand using a revived 18th century recipe.

It’s prepared in 11kg rounds and 3kg wheels encased in cheesecloth.

Growing demand from local foodies, and potential interest from outlets in London, means that production is being upped from the current 480kg-a-week.

Aled Rowlands, Bodnant’s dairy manager, said: “Aberwen is currently our bestseller…”
