When the Cheese Shop opened in Carmel-by-the-Sea in 1975, most deliveries came from Europe by way of an 18-wheeler from the East Coast. And when those big rigs roared into the quaint downtown, the local constabulary had conniptions.

“These big trucks would show up every two to four weeks, and the Carmel P.D. would just go nuts – you can’t park there, you can’t stop there, what do you think you’re doing?” says Cheese Shop owner Kent Torrey, who started as an employee in 1986. “And I’d be out there, negotiating with the cops and looking over my shoulder saying, ‘Just get this thing unloaded as fast as you can.’ “

The cheese business has been transformed since those early days, when the Cheese Shop was an outpost of fine cuisine and its wares were mostly European. Today, this culinary landmark offers more than 200 artisanal cheeses from around the globe, delivered four times per week in small, cobblestone-friendly delivery vans.

Salutation Recipes

I'm trying to keep a log of all the things we cook which taste really lovely. You know what it's like: you tweak and tweak a recipe until it's barely recognisable and then wonder how you used to make it. And it will also save a lot of time and bits of paper when it comes to sharing those recipes with friends.
